Chocolate Chip Banana Bread - vegan

Chocolate Chip Banana Bread - vegan/gf, 134 cal per slice, dessert that will fill you UP 🍌🍫 .

- 1 flax egg (or 1 egg beaten)
- 1 ripe banana mashed (about 120 g)
- 2 tbsp maple syrup (42 g)
- 1/2 tsp vanilla extract
- 1/2 cup flour, oat is best (60 g)
- 1/2 cup almond flour (56 g - sub another 1/2 cup flour but also add 1 tbsp oil for richness)
- 1 tsp baking powder
- 1/2 tsp baking soda (omit if using regular egg)
- Pinch salt
- 1/4 cup chocolate chips - save some for topping (60 g)

Makes 8 slices in one junior loaf pan 
1. Preheat oven to 350F and grease your pan (maybe even line with parchment).
2. Mix egg, banana, maple syrup, vanilla.
3. Whisk together flour, almond flour, baking powder, salt.
4. Combine the two, folding, not overmixing!
5. Fold in chocolate chips.
6. Transfer to loaf pan.
7. Bake 40 minutes or until knife inserted comes out clean.
8. Cool completely and slice.
9. Keep refrigerated and lmk what you think!
